Chef Craig Hilliker

Executive Chef Craig Hilliker, leads the culinary team at Mitchell’s Fish Market in downtown Birmingham.  He has been with Mitchell’s Fish Market for 4 years, executing his commitment to fresh and classic cuisine.  Prior to joining Mitchell’s Fish Market, Chef Craig was with celebrated restaurateur and Master Chef Wolfgang Puck at MGM Grand Detroit.  He earned his Bachelor of Arts degree at Johnson & Wales in 2007, with a concentration in Hospitality and Culinary Arts.  His style of cooking favors a classic technique, using fresh and local ingredients to create simple but distinct flavor combinations. His beliefs naturally reflect Mitchell’s philosophy of absolute freshness as a way of life.

An avid sports enthusiast, Chef Craig also enjoys cooking in his spare time, expanding his culinary talent and passion.
